The manufacturing process
Angueiroun is distinguished by the use of traditional Var grape varieties, which give to wines their unique and authentic character. To preserve the quality of the grapes, the estate has its own own grape harvester, offering a flexibility and precision unparalleled during the harvest. Each stage of the process, including the grape harvest, is carried out with a special attention to detail.
A key element of the Angueiroun harvesting method is the harvest exclusively at night. This practice is essential for preserve the integrity of the rosé grapes, which are sensitive to light and UV. The grape harvesting machine used at the estate operates according to a centrifugal force mechanism, gently shaking the vines to detach the grains without damaging them or releasing too much juice. Everything is scrupulously controlled, because only a harvest of intact grapes allows for a quality wine. If the grapes are too ripe, this could lead to a oxidation.
