Domaine Sainte Marie

The history of Domaine Sainte-Marie dates back to the 18th century.
The lands of the Domaine then belonged to the Monastery of La Verne, located a little higher up in the Maures massif.
THE ESTATE'S VINES

The Sainte-Marie vineyard covers 40 hectares. Facing due south, the terroir is made up of sandy and permeable soil. It is largely composed of schist, micaschist and white quartz. The slopes are quite gentle. The vines benefit from a hot and dry climate in summer. The nights are cool in both summer and winter.
A plant cover is maintained for as long as possible and its maintenance is ensured as a priority by the passage of sheep.

The plot is grouped in the middle of a formidable forest made up of cork oaks, pines, strawberry trees, heather, etc.

This green lung offers a breath of fresh air in summer and immense biodiversity all year round. The property is thus certified High Environmental Value, level 3, the highest.
More than 12 varieties of grapes are grown: Grenache, Cinsault, Syrah, Cabernet Sauvignon, Carignan, Mourvèdre, Semillon, Muscat, Tiburen, Clairette, Rolle, Ugni-Blanc. The average age of the vines is 35 years.

Driven by a great attachment to nature and a passion for a job well done, the wines of Domaine Sainte-Marie are produced according to the specifications for organic and Vegan wines.

VINIFICATION

The harvest is carried out between 3 a.m. and 8 a.m. to take advantage of the natural coolness of summer nights.
Four cellars then provide the greatest care and the most suitable technology for each of the estate's wines.
The Grande Cave is equipped with thermo-regulated stainless steel vats. The musts are kept in the barn for several days thanks to a high-performance cooling system.

Bottling is done on site. The use of sulfites is subject to extremely restrictive constraints.
The concrete cellar allows us to keep red wines at complete rest for many months, with optimal temperature maintenance.
The 1884 red and white vintages, aged in oak barrels, each benefit from a specific cellar.

Led by Christopher Duburcq, training manager. He is a great wine enthusiast and nature lover.
Guy Clément, Cellar Master, has extensive experience in the vinification of Provence and Bordeaux wines. His awareness of wines, mixed with empiricism and strong intuition, is recognized by all. He is assisted by Grégory Maillot.

Estelle Levet, Head of Culture, was born in the valley. She knows the plots down to the smallest details and subtleties. She is assisted by Laurent Locati and a team of subcontractors. Pedro Dos Santos manages all the technical installations.
Chloé Maillot is in charge of sales administration and the cellar.
